  • 2 cups rolled oats

  • 1 ¾ cups almond milk (or milk of choice)

  • 2 eggs (or flax eggs)

  • ¼ cup maple syrup

  • 2 tablespoons melted coconut oil or butter

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 2 ½ cups mixed berries (fresh or frozen)

Instructions

    Preheat oven to 375°F. Grease a 9×9-inch baking dish.

  2. In a large bowl, combine oats, baking powder, cinnamon, and salt.

  3. In a separate bowl, whisk milk, eggs, maple syrup, oil, and vanilla.

  4. Pour wet ingredients into dry; stir until combined.

  5. Fold in most of the berries, reserving some for topping.

  6. Pour mixture into baking dish. Scatter reserved berries on top.

  7. Bake for 42–50 minutes, until set and golden.

  8. Cool 10–15 minutes before slicing and serving.

Notes

  • Use certified gluten-free oats if needed.

  • For vegan, substitute eggs with flax eggs.
